This intensive course will provide students with a technical, practical and theoretical knowledge to everything related to food production, preparation, consumption and management and business.

The course is composed of 2 different modules.

In the first 10-week module, students will learn the fundamental cooking techniques.

During the 20-week programme,  students will  reach a professional level.

The 10-week programme includes training in:

  • Homemade Pasta, gnocchi, Italian classics
  • Fish and sea food
  • Baking: bread, pizza
  • Introduction to pastry

The 20-week programme includes:

  • Homemade Pasta, gnocchi, Italian classics
  • Fish and sea food
  • Baking: bread, pizza
  • Introduction to pastry
  • Nutritional, lactose free and vegan cuisines
  • Puff pastry; Phyllo dough
  • Mignon pastry
  • Breads from the world; international recipes and cuisines
